Ingredients
- 5 cups mashed ripe papaya
- 1/4 cup orange juice
- 1 1/3 (1.75 ounce) packages dry pectin
- 5 cups white sugar

Preparation
Step 1
Stir together papaya, orange juice, and pectin in very large pot over medium-high heat until it begins to boil. Stir constantly as mixture heats. Once boiling, stir in sugar, and return to boil, stirring constantly. Once jam has returned to boil, start timer, and boil for exactly 1 minute.
Ladle hot jam into hot, sterilized canning jars and seal with lids and rings. Allow to cool to room temperature, and refrigerate any jars that do not seal.
