Ingredients

  • 4

    cups low sodium vegetable broth

  • 2

    cups quinoa

  • 1/4

    cup olive oil

  • 1 3/4

    lb butternut squash,peeled,seeded and diced

  • 2

    small zucchini,cut into 1"cubes

  • 1

    bunch scallions,chopped

  • 1

    cup diced dried apricots

  • 1

    cup craisins

  • 1

    cup chopped fresh parsley

  • 1

    lime,juice

Directions

Bring broth to a boil,reduce heat to low and stir in quinoa. Cover pan and simmer until quinoa absorbs liquid,10-15 min, Remove from heat Heat oil in a large skillet over med heat. cook both squashes until slightly browned and tender,about 10 min. stir in quinoa and gently mix in scallions,apricots,craisins and parsley . Drizzle with lime juice to taste. This is best made on a stove top,it would turn into mush if cooked inside a bird. .
