Ingredients
- 2 tbsp olive oil
- 4 large cloves garlic, minced
- 2 tbsp crushed red chili flakes
- 1 cup vodka
- 2 cans (28 oz, 796 mL) whole tomatoes
- S&P
- Pecorino Romano or Parmigiano-Reggiano

Step 1
Gently heat olive oil in a pot and simmer the minced garlic for about 5 minutes, taking care not to brown the garlic. Add the red chili flakes and fry for a minute and add in the vodka. Bring to a boil and simmer for another five minutes. Puree the 2 cans of whole tomatoes and add to the pot. Bring to a boil and simmer between 30 and 40 minutes until thickened. Add S&P to taste. Serve with pasta and pass the cheese.
