Ingredients

  • 2 cups pecan halves
  • 3 eggs
  • 3/4 cup corn syrup
  • 3 tbsp sugar
  • 4 tbsp brown sugar
  • 3 tbsp melted butter, cooled
  • pinch salt
  • 1 tsp vanilla
  • 3 tbsp bourbon
  • 1 cup chocolate chips
  • pie crust

Preparation

Step 1

Roll pie dough into 12 inch round pie plate, crimp edges. Freeze 2 hours.
Preheat oven to 325 degrees. Chop 3/4 cup pecans coarsely.
In a bowl, whisk together eggs, corn syrup, both sugars, melted butter, salt, vanilla, and bourbon until well blended. Stir in chopped pecans. Spread chocolate chips on bottom of pie crust. Pour filling on top of chocolate chips. Arrange rest of pecan halves on top of filling in a nice pattern.
Bake for 30 minutes, then cover edges with foil, bake for 30 more minutes.
Let cool before serving.
