Ingredients
- 1 1/4 cup all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons maple syrup
- 1 beaten egg
- 1 cup milk
- 1 teaspoon bacon drippings
- 2 teaspoons melted butter
- 1/2 pound bacon

Preparation
Step 1
Cut the bacon into small pieces.
Add to a hot frying pan, and cook until golden brown. Remove with a slotted spoon and let drain on a paper towel.
Stir together the dry ingredients.
Combine the syrup, egg, milk, bacon drippings and melted butter. Using a fork beat until combined.
Add to the dry mixture, stirring till blended but still slightly lumpy.
Pour about 1/4 cup batter onto a hot, lightly buttered griddle.
Let cook for 30 seconds, then sprinkle a handful of bacon on top.
Cook till golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edges.
Makes about 8 4" pancakes or about 30 dollar sized.
Serve.
Eat.
