Ingredients

    lb pinto beans

  • 1/2

    lb smoked sausage (or 4 slices bacon or 1 ham hock)

  • 1

    onion, chopped

  • 2

    stalks celery, chopped

  • 1

    large red or green bell pepper, chopped

  • 1

    jalapeno, sliced in half

  • 1

    tablespoon garlic powder

  • 4

    sprigs fresh cilantro

  • 1

    tomato, chopped

  • 1

    tablespoon black pepper

  • 1

    tablespoon chili powder

  • 1

    tablespoon salt

  • 1

    teaspoon sugar

Directions

1. Rinse beans thoroughly and drain. Place in pot with 4 quarts of water. Bring to a boil; add sausage, onion, celery, bell pepper, jalapeno, garlic, cilantro and tomato. Reduce to simmer and partially cover. When beans begin to soften (about 1 hour), add pepper, chili powder, sugar and salt.
