Ingredients
- 1 15oz can blacks-eyed peas, drained
- 1 11oz can white shoe peg corn, drained
- 2/3 C green onion, chopped
- 2/3 C cilantro, chopped
- 1/2 C tomatoes, chopped
- 2 avocados, chopped
- 1/3 C olive oil
- 1/4 C red wine vinegar
- 2 cloves garlic, pressed
- 1 tsp cumin
- salt and pepper
- Tortilla Chips

Preparation
Step 1
Combine olive oil, vinegar, garlic, cumin, salt and pepper. Mix peas, corn, and onion and cilantro. Add tomatoes and avocados just before serving. Can be made 1 day ahead.
