Ingredients

  • 1 15oz can blacks-eyed peas, drained
  • 1 11oz can white shoe peg corn, drained
  • 2/3 C green onion, chopped
  • 2/3 C cilantro, chopped
  • 1/2 C tomatoes, chopped
  • 2 avocados, chopped
  • 1/3 C olive oil
  • 1/4 C red wine vinegar
  • 2 cloves garlic, pressed
  • 1 tsp cumin
  • salt and pepper
  • Tortilla Chips

Step 1

Combine olive oil, vinegar, garlic, cumin, salt and pepper. Mix peas, corn, and onion and cilantro. Add tomatoes and avocados just before serving. Can be made 1 day ahead.
