Ingredients
- 1 1/2 C toasted pecans
- 6 T granulated sugar
- 1 C unsalted butter, room temperature
- 1/2 t pure vanilla extract
- 2 C all-purpose flour
- 1/2 t salt
- 1/4 C powdered sugar

Step 1
Preheat oven to 300 F. Line a baking sheet with parchment paper.
Place the pecans and 2 T sugar into a food processor fitted with a metal blade. Finely grind the pecans and set them aside.
In the bowl of your electric mixer, cream the butter and remaining 4 T sugar until light and fluffy. Add the vanilla extract. Combine the flour and salt and stir into the butter mixture. Add the nuts.
Form the dough into 3/4 inch balls and place 2 inches apart on the prepared baking sheet. Bake about 20 minutes. or until light brown in color. Cool cookies on baking sheet for a few minutes and while cookies are still warm. sprinkle them with powdered sugar.
Store in an airtight container. Makes 3 dozen.
