Ingredients

  • 2 lbs. short ribs, cut into 2 or 3 rib pieces
  • 1 small onion, sliced
  • 1 stalk celery with leaves, cut in half
  • 2 teaspoons salt
  • 3 cups water
  • Homemade Noodles or 1 1/2 cups (1/2 of 6-oz. pkg.) narrow egg noodles

Preparation

Step 1

In 3-qt. casserole place short ribs, onion, celery, salt and water. Cover. Microwave at High (10) 20 Minutes. Stir. Cover. Microwave at Low (3) 65 to 70 Minutes, rearranging after 30 minutes, until tender.
Remove ribs and keep warm. Add dry noodles to broth. Cover. Microwave at High (10) 15 to 20 Minutes, until tender.

Homemade Noodles
Beat together 1 egg, 2 tablespoons milk and 1/2 teaspoon salt. Add 1 cup unsifted all-purpose flour and mix to make a stiff dough. Roll out very thin on floured surface let stand 20 minutes. Roll up loosely; slice 1/4-in. wide. Spread loosely in 3-qt. oblong glass baking dish. Microwave at Low (3)10 to 12 Minutes, stirring 6 minutes, until noodles are dry.
Makes 3 cups cooked noodles
