I created this when I was scrounging thru supplies during a storm for breakfast

Ingredients

  • 1 baked biscuit or toasted English Muffin
  • 2 eggs
  • 1 package of hollandaise sauce mix or melted cheese (quick easy hollandaise sauce below)
  • 2 slices of well friend bologna or lunch ham

Preparation

Step 1

Toast the muffin or bake the biscuit
Take a well greased pan and cook 2 eggs over light (cook until the white is mostly done, and flip it over don't bust the yellow)
put one egg on each side of bread, add your meat, then the sauce or cheese

Hollandaise sauce:

Melt a few tablespoons of butter set aside
With your mixture or a whisk in add a few egg yolks, a tad of Dijon mustard and lemon juice whisk well or continue blending on low speed with mixer. Stream the melted butter in while blending on low speed. Serve immediately
