Ingredients

  • 1 large onion, minced
  • 3 cloves of garlic
  • 2 T olive oil
  • 2 T crushed red pepper flakes
  • 2 16 oz. cans of tomatoes or 2 lbs. fresh tomatoes
  • (for canned tomatoes add one small grated carrot)
  • 16 ounces of Penne pasta
  • Parmesan or Romano cheese

Preparation

Step 1

Cook pasta until cooked al dente, firm to the bite
Brown onion & cloves in olive oil - golden color
add red pepper flakes and tomatoes and carrot
Cook over low heat for 2 hours.
Cover noodles with sauce and grated parmesan or Romano cheese
