Preparation

I only make one claim about my food: it's vegan.

. It is really easy and produces a remarkably flaky pastry for the amount of time it takes to make. Again, the lamination process is super fast and the end result, while not as light and flaky as the

1. Whisk together flour(s) and salt.

3. Sprinkle water over the flour/fat mixture and gently mix together with a wooden spoon (you don't want to mash the fat chunks too much). When you can't incorporate any more flour in, use your hands to gather together a dough ball. Press/squeeze the flour mixture together to form a dough, rather than kneading. I'm thrilled you've been easing back into blogging! I never deleted a feed to your blog, so when I saw your first new post, I hoped this was a sign of more to come. Listen - we depend on some of your recipes (especially your burgers), and your harvest pie made our thanksgiving savory and really special. You make a difference.

I love this! I make a portobello wellington and have to order my vegan puff pastry...this actually looks a lot simpler than I thought it would be to make and I would rather make my own, I'm definitely going to try this...have you tried freezing it/defrosting?? Welcome back to blogging, I run a vegan blog too(and yes there are a ton of them) and took a lot of time off - I have three kids under the age of 6 - life gets busy!! I just recentley started up again because too I miss the creative outlet and I love building my family cookbook, keeps us on track and never bored...anyway...just wanted to say hi, first time stopping by! nice to meet you! Looking forward to more recipes!
