Aunt Lela’s Pineapple Pudding

This was another one of Aunt Lela’s recipes - Frank Hobb’s wife. Its become a family favorite at Thanksgiving!

Ingredients
- 3 eggs, beaten
- 1/3 sugar
- Lemon juice
- 8 slices of bread - cubed
- 1 pint (can) crushed pineapple
- 1/2 cup margarine - melted

Preparation
Step 1
Preheat oven to 350 degrees
1. In small bowl, add sugar and few drops of lemon juice to beaten eggs. Add pineapple and pinch of salt.
2. Gently fold in ½ of cubed bread. Then top remaining bread and pour melted butter over top.
3. Bake for ½ hour.
