Peppermint Scones

We make these scones for our Christmas Eve brunch. They go famously with with a great Christmas-flavored, hot tea.

Ingredients
- 2 C flour
- 1/3 C sugar
- 1 T baking powder
- 1/2 tsp. salt
- 1/2 C cold butter
- 1 egg
- 3 TBS. Heavy cream
- 1 tsp. peppermint extract

Preparation
Step 1
1. In a food processor, mix together flour, sugar, baking powder, salt.
2. While still in the food processor, "cut" in butter a couple of chunks at a time until mixture resembles coarse sand. Empty mixture into a large bowl.
3. Mix together egg, heavy cream and peppermint extract. Pour into dry mixture and mix by hand until dough is moistend (It will appear dry and crumbly).
4. Need until the mixture stays together and all ingredients are incorporated.
5. Roll dough out onto a floured surface abpout 1/2" thick; cut out scones. Sprinkle crushed peppermint candies on top of each scone.
6. Bake at 425 for 10-14 min. according to size of scones.
