Ingredients
- 2 egg whites
- 1/8 tsp each cream of tartar and salt
- 1/2 cup sugar
- 1 TB minced fresh mint
- 1/4 tsp. peppermint extract
- 1/2 cup coarsly grated bittersweet chocolate

Preparation
Step 1
Preheat oven to 300 F and line 2 baking sheets with parchment paper. Beat egg whites with cream of tartar and salt until soft and fluffy. Beat in sugar 1 tablespoon at a time until mixture forms stiff peaks. Fold in mint, extract and chocolate.
Spoon tiny dollops onto prepared baking sheets and bake for 20 minutes or until cookies are dry.
