Ingredients
- 2 pounds red potatoes, skin on - halved
- 3/4 cup sour cream
- 11/4 cups mayonnaise
- 1/2 cup white vinegar
- 1 teaspoon cracked black pepper
- 1/2 teaspoon salt
- 1/8 teaspoon horseradish sauce (optional)
- 6 pieces bacon, cooked and chopped
- 6 green onions, sliced
- 1/2 cup - sharp cheddar cheese
Preparation
Step 1
1) Boil potatoes in large pot of boiled water. Cook about 6 minutes or until tender (not mushy. Remove and cut into 1-inch cubes.
2) fry bacon in frying pan, remove to paper towel lined plate to drain. Reserve 3 Tablespoons of bacon fat.
3) Place potatoes on baking sheet and toss with reserved bacon fat. Bake in oven at 425 for about 15-20 minutes or until browned. Season with Salt & Pepper.
4) Combine sour cream, mayonnaise, white vinegar salt and pepper in a small bowl. Chop bacon and green onions. Combine potatoes and dressing, adjust seasoning as necessary.
5) Refrigerate for 1 hour, top with bacon, green onions and cheese before serving.
