Ingredients

    pounds red potatoes, skin on - halved

  • 3/4

    cup sour cream

  • 11/4

    cups mayonnaise

  • 1/2

    cup white vinegar

  • 1

    teaspoon cracked black pepper

  • 1/2

    teaspoon salt

  • 1/8

    teaspoon horseradish sauce (optional)

  • 6

    pieces bacon, cooked and chopped

  • 6

    green onions, sliced

  • 1/2

    cup - sharp cheddar cheese

Directions

1) Boil potatoes in large pot of boiled water. Cook about 6 minutes or until tender (not mushy. Remove and cut into 1-inch cubes. 2) fry bacon in frying pan, remove to paper towel lined plate to drain. Reserve 3 Tablespoons of bacon fat. 3) Place potatoes on baking sheet and toss with reserved bacon fat. Bake in oven at 425 for about 15-20 minutes or until browned. Season with Salt & Pepper. 4) Combine sour cream, mayonnaise, white vinegar salt and pepper in a small bowl. Chop bacon and green onions. Combine potatoes and dressing, adjust seasoning as necessary. 5) Refrigerate for 1 hour, top with bacon, green onions and cheese before serving.
