Ingredients

  • 2 boxes frozen filo mini shells
  • 2 ribs of celery, diced
  • 2 medium red apples
  • 1/2 cup coarse pecans
  • 2 tablespoon red onion, finely diced
  • 4-6 tablespoons dried cranberries
  • 2-4 tablespoons lemon juice
  • 2 heaping tablespoons mayonnaise
  • 4 ounces shredded cheese
  • salt & pepper, to taste

Step 1

In medium bowl, combine celery, apples, pecans, onion, and dried cranberries.

Dust with salt and pepper.

Stir in lemon juice and mayonnaise.

Distribute cheese in shells on baking sheet.

Fill to heaping with mixture above.

Bake at 400 degrees for 10-12 minutes.
