Ingredients
- 2 tbs. vegetable oil
- 1 large red bell pepper, chopped
- 1 large onion, chopped
- 1 tsp. jarred minced garlic
- 2 (14 !/2 oz.) cans Mexican style stewed tomatoes, drained and chopped
- 2 limes
- 7 cups chicken broth
- 3 cups chopped rotisserie chicken
- 1/4 cup fresh cilantro
- 1 tbs. chopped pickled jalapeno pepper
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- TOPPINGS: shredded pepper Jack cheese, sour cream, lime wedges

Step 1
Heat oil over medium high heat. Add bell pepper, onion, and garlic; saute 3 minutes or until vegetables are tender. Stir in tomatoes, and cook 2 minutes. Cut limes in half crosswise. Squeeze lime juice directly into vegetable mixture; add lime shells, and chicken broth to soup. Bring to a boil; reduce heat and simmer 10 minutes.
Remove and discard lime shells. Stir in chicken, cilantro, jalapeno, salt, and pepper. Cook 5 minutes or until thoroughly heated. Serve with toppings, if desired.
