Roasted Ranch Potatoes with Bacon and Cheese

Potatoes mixed with ranch, bacon and cheese, and then roasted. Perfect as a hearty side dish with dinner or for pot lucks, this spin on classic baked potatoes is sure to be a hit.

Ingredients
- 2 pounds unpeeled potatoes, washed and cut into chunks
- 1/2 cup bottled ranch dressing
- 1/4 cup shredded cheddar cheese, plus more for topping
- 1/4 cup cooked bacon, crumbled
- 1 tablespoon dried dill weed
- 3 scallions, washed and chopped
- Salt
- Pepper
- Non-stick cooking spray

Step 1
Preheat oven to 350 degrees.
In a bowl mix the ranch dressing, cheese, bacon, dill. Add potatoes and season with salt and pepper. Coat potatoes evenly with the mixture.
Grease a 9 x 13 baking dish and add the potato mixture, covering with foil. Bake for 1 hour, stirring halfway through to ensure even cooking.
Increase oven temperature to 400 degrees and bake for an additional 15 minutes, uncovered. If desired, sprinkle cheese on top and bake a few more minutes until it becomes melted.
Garnish with scallions and serve.
Note: One great suggestion is to use a ranch dressing that is flavored with chipotle or to use other kinds of creamy dressings. Also, many of you have changed up the spices and used garlic or other herbs in addition to or in place of the dried dill weed.
