- 1 c. dried pitted dates, 4 oz. chopped
- 1 c. water
- 1 T. fresh lemon juice
- 2 T. honey
- 2 T. reduced fat or no stir natural chunky peanut butter
- 2 T. unsweetened cocoa powder
- 1 T. unsalted butter
- 1/4 t. kosher salt
- 8 full sheets whole wheat graham crackers, finely ground, about 1 1/4 c.
- 1/2 cup old fashioned rolled oats (not instant)
- Pam
- For coating: unsweetened coconut flakes, crushed graham crackers, finely chopped peanuts, low fat granola, about 1/2 c. of each

Step 1
Combine dates, water & lemon juice in medium saucepan. Simmer over medium heat breaking up any large pieces of dates with spoon until mixture resembles a thick paste, 15-20 minutes. Stir in honey, peanut butter, cocoa powder, butter & salt until evenly combined. Stir in graham crackers and oats. Remove from heat.
Lightly mist a baking sheet with Pam. Drop level tablespoons of the cookie mixture onto the prepared pan. Refrigerate until just chilled and set, about 20 minutes.
Put desired toppings in small bowl. Roll each cookie in desired topping and flatten slightly into plump disk. Cover and refrigerate until firm. Serve chilled.
