Ingredients
- GRAVY:
- 1 lb boneless beef round steak, 3/4 inch thick and trimmed
- 3 Tbs all purpose flour
- 1 tsp dry mustard
- 1/4 tsp salt
- 1/8 tsp ground red pepper (cayenne)
- 2 Tbsp vegetable oil
- 2 cups sliced fresh mushrooms
- 1 Tbsp all purpose flour
- 3/4 cup lower sodium beef broth
- 1/3 cup dry red wine or tomato juice
- 1 tsp lower sodium worchestershire sauce
- 1/4 tsp ground sage
- dash ground red pepper (cayenne)

Step 1
Cut the steak into 4 pieces. Pound both sides of the pieces until they are 1/4 inch thick. In a plastic bag, combine the 3 Tbsp flour, mustard, salt and the 1/8 tsp red pepper. Shake the steak pieces, 1 at a time, in flour mixture to coat. In a 10 inch nonstick skillet, heat the oil over moderately high heat. Add 2 of the steak pieces and cook for 2 minutes on each side or until golden brown. Transfer to a platter; cover with foil and keep warm. Repeat the remaining steak pieces. To prepare the gravy, add the mushrooms to the drippings in skillet and cook for 3 minu8tes or until tender, stirring frequently. Stir in the 1 Tbsp flour. Add the beef broth, wine, worcestershire sauce,sage and dash of red pepper. Bring to a boil over moderate heat and boil for 1 minute or until thickened, stirring constantly. Serve gravy over the steak.
