Almond Tea Cakes - Wheat Free

- 2-1/2 cups Ground Almonds
- 1 teaspoon Cinnamon
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 2 Eggs
- 1/4 cup Melted Butter
- 1/2 cup Honey - I used Blackberry Honey

Preparation
Step 1
Preheat your oven to 375 degrees.
Line 12 1/2-cup muffin tins with paper liners and set aside.
Combine ground almonds with cinnamon, soda, and salt, mix very well.
Combine eggs, butter and honey and beat together with whisk or mixer.
Add almond mixture to egg mixture and blend thoroughly. Fill the lined muffin cups half full with mixture.
Bake in lower third of the oven for 15-20 minutes or until golden brown.
Transfer muffins to a wire rack to cool. When cool you can remove the muffin liners.
