Beef and Vegetarian: All About Best Burgers

Ingredients
- Grind Your Own
- 1 1/2 lbs boneless chuck roast
- Meat from 2-3 short ribs
- 1/4 lb boneless sirloin filet
- 2 T finely grated onion
- 1 T heavy cream
- 1 t salt
- Black pepper
- Pimento Ceese Burgers
- 1/2 pound extra sharp cheese, coarsely shredded
- 4-6 T mayonnaise
- 2 T diced pimento
- Kosher salt and freshly ground pepper
- 2 pounds burger mix
- Bacon Pork Burgers with Apple Mustard Spread
- 6 slices bacon
- 1 clove garlic
- 1 pound ground pork
- 1 t coarse or kosher salt
- 1/4 t fresh ground pepper
- 1/4 t sage 2 T Apple butter
- 2 T mayonnaise
- 2 t spicy brown or Dijon mustard
- Vegetarian Burgers
- 2 T olive oil
- 1 medium onion, chopped
- 2-3 slices wheat bread
- 1 19oz can garbanzo beans, drained and rinsed
- 1/2 cup cooked rice
- 2 T tahini
- 2 T tamari or light soy sauce
- 2 T chopped flat leaf parsley
- 1 T chopped garlic
- 1 1/2 t ground cumin
- 1/2 t cayenne
- Oil for frying or grilling

Preparation
Step 1
Cut chuck into 6-8 large chunks, trimming cartilage but leaving fat on meat
Trim the meat from the short ribs or use boneless, including some fat
Cut the sirloin into chunks
Place meat and processor blade on a baking sheet and place in freezer for about 15 minutes
Assemble the processor
Working in batches add beef and fat and pulse in three or four long bursts until chopped and fluffy
Place meat in a bowl
Grate onion into the bowl and add the cream tossing until lightly mixed
Shape into 4-6 burgers, lightly between pals and press a dent in the middle on one side
Sprinkle both sides with salt and pepper just before cooking
Cook over hot coals or on a preheated skillet 4-5 minutes per side for medium rare
Turn several times with a spatula but don't press
Pimento Cheese Burgers
Cook as directed above adding cheese to cooked burger
Bacon Pork Burgers with Apple Mustard Spread
Place bacon and garlic in processor and pulse
Add to ground pork in a bowlwih salt, pepper and sage
Mix remaining ingredients to spread over cooked burger
Vegetarian Burgers
Heat oil and sauté onions about 10 minutes
Place bread in processor and pulse
Combine beans, rice, tahini and tamari in a mixing bowl and stir until mixed
Add sautéed onion, parsley, garlic, cumin and cayenne and stir until well mixed
Add the bread crumbs about 1/2 cup at a time, stirring until mixture is moist but doesn't stick to hands
Form about 1/2 to 1 cup at a time into patties
To grill, cook about 6-8 minutes per side until crispy, 3-4 minutes if frying
