Tri Tip w/Chipotle Maple Marinade

Ingredients
- Marinade:
- 4 lb Tri Tip
- 3 TBLS Vegetable Oil
- 1 med. Brown Onion (chopped)
- 2 Garlic Cloves (minced)
- 3 lg Canned Chipotle Chiles in Adobo Sauce (pureed)
- 1 1/2 C Chicken Broth
- 1/4 C Ketchup
- 1/4 C Maple Syrup
- 3 TBLS Fresh Lemon Juice
- 2 TBLS Cider Vinegar (Apple is fine)
- 1 TBLS Kosher Salt
- 1/4 tsp Allspice

Preparation
Step 1
Marinade:
Heat oil in saucepan over medium high heat. Add onion and garlic, cook, stirring until lightly browned and onion is translucent, approx. 5 minutes. Place in a bowl and add chipotle chilies, chicken broth, ketchup, syrup, lemon juice, vinegar, salt and allspice. Whisk until well blended. Place tri tip in large zip lock bag and pour in marinade, reserving 1/2 cup. Marinate at least 4 hours or overnight.
If placed in refrigerator to marinate, remove 30 to 45 minutes before BBQing.
To BBQ:
Remove the tri tip from the marinade and grill on a preheated med/high grill until desired doneness, basting with reserved marinade every 5 to 10 minutes.
