Amy Vanderilt's Complete Cookbook, published in 1961, includes this recipe for waffles. My family has used it for over 10 years without a single failure.

Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 1/4 cup canola oil
  • 2 cups sifted all purpose flour
  • 3 tsp baking powder
  • 1 tsp sugar
  • 1/4 tsp salt

Preparation

Step 1

1. Place eggs, milk, and salad oil in blender or food processor. Cover. Run at high speed about 30 seconds, or until creamy. Add remaining ingredients. Mix at high speed about 1 1/2 minutes, or until smooth. Scrape mixture from sides of container with rubber spatula during blending.
2. If mixed by hand, beat thoroughly but quickly.
3. Pour batter onto hot waffle iron, bake until golden brown.
4. Serve with any favorite syrup or dusted with powdered sugar and a little melted butter.
