Ingredients
- Pineapple Cake (makes a 9.5 x 5.5 inch cake)
- 1 cups all-purpose flour
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1.5 eggs
- 1/4 cup vegetable oil
- 1/2 can (20 ounce) crushed pineapple with juice
- Rum glaze: rum, butter, brown sugar (cook them in a small pot)
- 1 . Mix together flour, salt, sugar, eggs, baking soda, baking powder, and oil. Stir in pineapple with juice. Pour batter into a greased 9.5 x 5.5 inch pan.
- 2 . Bake at 350 degrees F for 50 minutes, or until a toothpick inserted into center of the loaf comes out clean. Let the cake cool.
- 3 . Cut out small pieces with a cookie cutter or simply cut the cake into small squares.
- 4 . Serve with rum glaze, small pineapple pieces, and whipped cream.
