Ingredients
- Filling:
- 2/3 cup softened butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/4 cup milk
- 1 egg
- 2 cups flour
- 3/4 cup cocoa
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 3/4 cup confectioners sugar
- 1/4 cup half and half
- 1/4 tsp peppermint extract
- 1/4 tsp salt
- red or green food coloring

Step 1
Cream butter and sugars till light and fluffy. Beat in milk and egg. Combine all dry ingredients, gradually add to cream mixture, mix well. Cover and refrigerate 2 hours or till firm. On a lightly floured surface, roll out dough to 1/8" thickness. Cut with cookie cutter and shape, place 1" apart on greased sheets. Bake 375 5-6 mins or till edges are lightly browned. Cool on wire rack. Combine filling on bottom of 1/2 cookie, top w/remaining cookie.
