Ingredients
- 10 oz. package fresh spinach
- 1/2 tsp. salt
- 1 1/2 tsp. vinegar
- 1/2 tsp. tabasco sauce
- 3/4 cup finely chopped celery
- 14 cup finely chopped onion
- 3 hard-cooked eggs, chopped
- 3/4 cup diced Old English Cheese
- 1/3 cup mayonnaise
- 6 lettuce leaves
- 1 hard cooked egg, shredded
- 2 tbsp. horseradish

Preparation
Step 1
Stem Spinach, wash and dry thoroughly. Refrigerate. Tear spinach into small pieces, then chop into smaller pieces using a french knifr on a chopping board. Sprinkle with salt. Blend vinegar and Tabasco. Mix with spinach. Add celery, onion, chopped eggs and cheese. Blend in mayonnaise, stirring until mixture is well coated. Serve on lettuce leaf. Garnish top of each serving with one tbsp. shredded egg and place horseradish at side. Makes 6-8 servings.
