Ingredients

  • Splash pf olive oil
  • 1 large carrot (chopped)
  • 1 large celery stalk (chopped)
  • 1 medium onion (chopped)
  • salt & pepper to taste
  • 2-3 cup cooked beef or ground beef
  • splash of worcestershire sauce
  • 1 tsp basil leaves
  • 1 tsp oregano leaves
  • 1 tsp garlic powder (or fresh crushed garlic to taste)
  • 8 cups beef broth
  • 1 large can of diced tomatoes including liquid
  • 3/4 cup pearl barley

Preparation

Step 1

Heat oil in soup pot on medium heat
Add carrot, onion & celery. Add a dash of salt. cook until vegetables are soft.
Add beef, and all spices, cook for a few more minutes.
Add Worcestershire sauce
Add broth, barley and tomatoes and bring to a boil.
Reduce heat and cover.

Cook for at least an hour to allow barley to expand...
