Ingredients

  • 2 Tbsp. unsalted butter
  • 1 medium onion, minced
  • 2 garlic cloves, minced
  • 1 Tbsp. fresh thyme, chopped
  • 1 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 1/2 pounds russet potatoes, peeled and sliced 1/8 inch thick. use a mandoline if you have one.
  • 1 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 2 bay leaves
  • 1 cup shredded cheddar cheese.
  • variations...add 2 chps diced ham at the end of step 3.

Step 1

1. heat oven to 425.
2. melt butter in a large, heavy pot over medium-high heat. add the onion and cook, stirring occasionally, until soft and beginning to brown. add the garlic, thyme, salt and pepper, and cook for about 30 seconds.
3. Add the potatoes, broth, cream and bay leaves, bring to a simmer. reduce heat to medium-low and cover. simmer, stirring occasionally, until potatoes are just tender, about 13 minutes.
4.. Transfer the mixture to a 1 1/2 quart baking dish and sprinkle with the cheese. Bake until the top is golden brown, about 15 minutes.
