Ingredients
- 2 1/2 C Vegetable Shortening
- 1 1/4 C Light Brown Sugar
- 1/4 C plus 1 Tbs Granulated Sugar
- 1 1/2 tsp Fine Sea Salt
- 1 1/2 tsp Ground Cinnamon
- 1 1/2 tsp Baking Powder
- 2 3/4 C All Purpose Flour
- 1 RECIPE FOR VANILLA CAKE in two pans, ready to bake

Step 1
Preheat oven to 350 degrees.
In a stand mixer with paddle attachment, add the shortening, brown sugar, sugar, salt, cinnamon, and baking powder. Mix until ingredients come together (about 3 minutes). With motor running, add flour and mix until flour is absorbed and batter is chunky, but moistened, 3-4 minutes. It will look like a crumb topping.
Top the cake with crumb mixture and bake until the crumbs are golden and the cake is spongy, about 20 to 25 minutes.
Remove and cool. Serve warm or at room temp.
