Ingredients
- 1/4 cup vegetable oil, divided
- 4 pounds beef roast, trimmed and cut into 1-inch pieces
- 1 1/2 cup chopped onions
- 2 1/4 cups chopped green bell peppers, seeded and deribbed
- 2 or 3 jalapeno peppers, seeded and chopped
- 2 cloves garlic, pressed
- 1/3 cup chili powder
- 1 tablespoon oregano
- 1 tablespoon cumin
- Salt and pepper to taste

Preparation
Step 1
In a large skillet, brown beef in about 2 tablespoons of the oil. Don't worry about cooking it through - you just want it nicely browned. Remove from skillet and place in slow cooker. Sauté onions, bell pepper and jalapeno in remaining oil. Add chili powder, garlic, oregano, cumin, salt and pepper to taste and beer. Scrape up any browned bits from the bottom of skillet and pour liquid into slow cooker. Cover and cook on low heat setting for 7 to 8 hours.
SERVING SUGGESTION: Serve with corn bread and a large salad.
