This is a twist on Sheperd's Pie, except it has a bisquit crust instead of the traditional mashed potatoes.. It's a takeoff on Betty Crocker's version.

Ingredients

  • 2 Carrots chopped
  • 1 Large Onion Chopped
  • 1 T Olive Oil
  • 1 T Butter
  • 1/2 t Salt
  • 1/4 t Pepper
  • 1/2 t Bouquet Garni
  • 1 Lb Ground Beef (Lean)
  • 11/2 C Shark Cheddar cheese (or 1 C Cheddar and 1/2 c Parmesan)
  • 1 c Bisquick Mix
  • 1 C Milk
  • 2 eggs
  • 1/2 c Peas or 1 c spinach(optional)

Step 1

Preheat oven to 400
Saute Onion and carrot in an oven safe skillet in butter/olive oil combined. Season with Salt /Pepper until vegetables are soft. Add ground beef and brown. Season again with Salt/Pepper and Bouquet Garni.
Mix Bisquick, egg and milk in bowl or large measuring cup. Don't overmix.
Remove skillet from heat. Top with cheese and pour bisquick mix over contents.
Bake in oven until golden brown and bisquit mix is cooked through. approx 25 minutes.

Optional - If you want to make it healthier add 1 c Spinach or Peas at the end before the cheese...
