Ingredients
- Streusel Topping:
- 1/3 cup sugar
- 1 Tbsp. flour
- 1 Tbsp. butter
- 1/2 tsp. nutmeg
- Coffee Cake:
- 1 cup sugar
- 1/2 cup butter
- 1 cup eggnog
- 8 oz sour cream
- 1 tsp. rum extract
- 2 eggs
- 2 1/2 cups flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- Eggnog Glaze:
- 1/2 cup icing sugar
- 1-2 Tbsp. eggnogg

Step 1
Grease bottom of 13 x 9 pan. Mix all streusel topping with fork, set aside. Beat 1 cup sugar, 1/2 cup butter on medium or mix with spoon. Beat in 1 cup eggnog, sour cream, rum extract & eggs until blended. Stir in 2 1/2 cups flour, baking powder, soda & salt. Spread in pan. Sprinkle with streusel topping. Cover and refrigerate 8 hours.
Preheat to 350F. Uncover pan and bake 35-40 minutes. Cool 20 minutes.
Mix all eggnog glaze ingredient till smooth and drizzle over coffee cake. Serve.
