POTATO CASSEROLE WITH BACON AND CARMELIZED ONION

Ingredients
- 3 slices thick cut bacon, diced
- 1 large onion, halved and sliced thin
- 1/4 tsp salt
- 3 lb Yukon gold potatoes, sliced 1/8" on mandolin
- 2 tsp fresh thyme
- 1/2 tsp pepper
- 1 TBS salt,
- 1 1/4 cup chicken broth
- 1 1/4 cup beef broth
- 2 TBS butter cut into 4 pieces

Step 1
Oven 425 degrees, grease 13x9"
1. Cook bacon until crisp, remove from skillet, reserving 1 TBS bacon grease
2. To skillet add onion and salt. Cook about 25" adding 1 TBS water if onion becomes too dark or pan too dry and reduce heat
3. In a large bowl combine sliced potatoes, onions, thyme, 1/2 tsp salt, 1 TBS salt and bacon.
4. To emptied skillet add broths, bring to simmer.
5. Grease pan, pour potato mixture into pan and pour broth over top. Top with butter. Bake for 45-55". Let rest 20" before serving
