Ingredients
- 2 cups soaked rice noodles
- 2 tablespoons soybean or vegetable oil
- 2 cloves chopped garlic
- 2 eggs
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sugar
- 1/4 to 1/2 teaspoon fresh ground shreds of dry chili peppers
- Broccoli florets
- thinly sliced carrots
- snow peas
- thinly sliced chicken or pork (pre-cooked)
- may also add cooked shrimp if desired.

Preparation
Step 1
Bring 4 cups of water to a boil. Remove from heat and immerse noodles in water. Let stand 10 minutes, stirring occasionally, till noodles are soft and tender. Heat oil in wok over medium high heat. Add garlic and stir fry 1 minute. Break eggs into wok and scramble quickly until cooked. Drain noodles. Add noodles, soy sauce, vinegar and sugar to egg mixture. Stir quickly. Ad vegetables, stir fry 2 minutes flipping constantly. Add chicken, pork or shrimp stir fry 3-4 minutes.
