Ingredients

  • 3/4 cup cooked couscous
  • 1 Tomato chopped
  • 1/3 cup canned chickpeas, drained & rinsed
  • 2 scallions, chopped
  • 1 tsp. extra-virgin olive oil
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. chopped fresh basil
  • Lettuce

Preparation

Step 1

Combine the couscous, tomato, chickpeas, scallions, oil, lemon juice, and basil in a bowl. Toss & serve on a bed of lettuce.

Using a whole box of couscous, quadruple everything except basil (if using dried basil). Use between 1 & 2 Tbsp. of dried basil.
