Ingredients

  • 5 tablespoons Homemade Gourmet Taco Soup Seasoning Mix
  • 1 15.25 ounce can whole kernel corn, undrained
  • 1 14.5 ounce can diced tomatoes, undrained
  • 1 can water
  • 1 15.5 ounce can pinto beans, undrained
  • 1 4 ounce can green chilies, undrained
  • 1 pound cooked beef, drained or 1 cup shredded cooked chicken, (optional)

Preparation

Step 1

1. In a 2 quart (or larger) stockpot, combine all ingredients, except meat.

2. Bring to rolling boil on medium-high heat and simmer 20 to 30 minutes, stirring occasionally.

3. If desired, add cooked meat and heat through, about 5 minutes.

Serving suggestion: Top individual servings with crushed tortilla chips, sour cream, shredded cheddar, avocados and/or tomatoes and serve with Homemade Gourmet's Texas Cornbread.
