Chicken Liver Pasta

Outstanding chopped tomato based pasta with chicken livers. This has wonderful complex flavours.

Ingredients
- 2 tbsp canola oil
- 1 medium onion finely chopped
- 1 28 oz can of chopped Roma Tomatoes
- 3/4 tsp of salt
- 1 tsp fresh ground pepper
- 1/2 tsp of crushed red chilli peppers
- 1 tsp of basil
- 2 tbsp of butter
- 1 tps canola oil
- 1 lb of chicken livers, trimmed and quartered
- 2 tbsp of dried parsley or 1/3 cup of fresh italian finely chopped.
- 3/4 lb of linguine

Step 1
Pour oil into pan over medium heat add chopped onions and saute until soft. Add chopped tomatoes and liquid,all remaining seasonings (salt, pepper, chilli bring to a boil and simmer uncovered for 25 minutes. Add chillis and cook until reduced and thick. This step takes about 15 minutes more. Prepare Linguini in boiling water according to package directions. In a separate pan melt butter and canola oil then add quartered chicken livers. Saute for about 5 minutes. Add chicken lviers and drippings to sauce and heat as required. Mix in parsley. Drain pasta, mix in sauce and serve!
