Ingredients
- For slow cooker balsamic chicken
- 2 pounds boneless, skinless chicken thighs
- 4 garlic cloves, minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 teaspoon Herbes de Provence
- 3/4 cup balsamic vinegar
- 2 Tablespoons honey
- For zucchini orzo
- 1 Tablespoon olive oil
- 1 yellow onion, diced
- 2 large zucchini, diced
- 4 cups cooked whole wheat orzo
- 1/4 teaspoon kosher salt
- Dash of black pepper

Preparation
Step 1
MAKE AHEAD
• 8 ounces dry whole wheat orzo, cooked according to package directions (4 cups cooked)

• Cut vegetables: onion, zucchini
DIRECTIONS
For slow cooker balsamic chicken
1. Combine all ingredients in a slow cooker
. Cook on high 3-4 hours or low 7-8 hours.
2. Save half for Meal #3.
For zucchini orzo
1. Heat a large non-stick skillet over medium high heat and add oil,onion, and zucchini. Cook for 3-4 minutes until browned.
2. Turn heat down to low and add orzo, salt,and pepper.
3.Heat thoroughly and serve alongside balsamic chicken.
