Ingredients
- 1 cup low fat, low sodium cottage cheese
- 2 eggs
- 4 egg whites (about 3/4 cup)
- 2 tablespoons Homemade Gourmet� Grandmothers Sunday Roast Seasoning
- 1/4 cup low sodium, fat free chicken broth
- 1 cup chopped onion
- 1 cup chopped broccoli
- 1/4 cup shredded carrot (about � medium carrot)
- 1/3 cup shredded low fat sharp cheddar cheese

Preparation
Step 1
1. In a blender or food processor, combine cottage cheese, eggs, egg whites and seasoning; puree until very smooth, set aside.
2. In a 10-inch non-stick skillet, bring chicken broth to a boil over medium high heat, add onions; cook and stir for 5 minutes, or until onion are soft and liquid is evaporated.
3. Add broccoli, and carrots; saute or 2 minutes. Add egg mixture and cheese, reduce heat to low. Cover and cook for 25 minutes, or until eggs are set.
