Green Bean Casserole with Fried Leeks

This casserole is a better version than the traditional green bean casserole.
Ingredients
- 2 T butter
- 2-8oz pkgs sliced fresh mushrooms
- 1 teas dried thyme
- 2 shallots, finely chopped
- 1/2 c Madeira (I used dry sherry)
- 1 c whipping cream
- 1 1/4 lbs fresh green beans, trimmed
- 2 large leeks, cleaned and thinly slice crosswise
- Vegetable or peanut oil
- salt to taste
Preparation
Step 1
Melt butter in a skillet over medium-high heat. Add mushrooms and thyme, saute 5 minutes. Add shallots, saute 3 minutes or until tender. Add Madeira and cook over medium-high heat 3 minutes or until liquid evaporates. Add whipping cream and cook 2 to 5 minutes or until slightly thickened. Remove from heat.
Meanwhile cook beans in a small amount of boiling water for 5 minutes or until crisp-tender, drain. Add beans to mushroom mixture and toss gently. Spoon into a greased 2-quart shallow baking dish. Cover and keep warm.
Preheat oven to 400. Fry leeks in oil until golden brown. Remove and drain on paper towels. Sprinkle with salt. Then sprinkle leeks over warm bean mixture. Bake uncovered at 400 for 5 minutes or until casserole is heated through.
