  • 3/4 cup (100g) dark brown muscovado sugar
  • 1/3 cup (80ml) ruby port
  • 3 cups (300g) cranberries
  • 1/2 cup (75g) currants
  • 1/2 cup (75g) raisins
  • 1/2 cup (75g) dried cranberries
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp freshly grated nutmeg
  • 1 satsuma
  • 2 tbsp. (30 ml) rum
  • 1/2 tsp (2ml) vanilla extract
  • 2 tbsp (50g) honey
