- 3/4 cup (100g) dark brown muscovado sugar
- 1/3 cup (80ml) ruby port
- 3 cups (300g) cranberries
- 1/2 cup (75g) currants
- 1/2 cup (75g) raisins
- 1/2 cup (75g) dried cranberries
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp freshly grated nutmeg
- 1 satsuma
- 2 tbsp. (30 ml) rum
- 1/2 tsp (2ml) vanilla extract
- 2 tbsp (50g) honey

Step 1
Mix the sugar and port in a large pan and place on a medium heat for a couple of minutes to dissolve the sugar.
