  • 2.25 cups (7 oz) walnut pieces, toasted
  • 6 tbsp butter, room temp
  • 1 1/4 cup brown sugar
  • 1 egg
  • 1 1/2 tsp dark rum
  • 1/2 cup flour
  • splash vanilla
  • 1/2 tsp salt

Preparation

Step 1

Preheat oven to 375 degrees. Finely chop 1 1/2 cups walnuts.
Beat butter and sugar in mixer until fluffy. Beat in egg, vanilla and rum. Stir in flour and salt, scraping down sides of bowl. Fold in walnuts.
Drop dough (2 tsp) onto parchment-lined baking sheets, spacing 2 inches apart. Bake for 4 minutes, remove from oven, then top with rest of walnut pieces. Return to oven, bake 8 more minutes. Let cool on wire racks 10 minutes.
