Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, minced
  • 3 garlic cloves, crushed
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 pound lean ground beef
  • 1/2 cup canned tomato sauce
  • 1/2 cup low sodium chicken broth
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon light brown sugar
  • 1 avocado, chopped
  • 1 tomato, chopped
  • 1/2 head of lettuce, chopped
  • 1 cup sour cream
  • 1 1/2 cups of sharp cheddar cheese, grated
  • tortillas, taco shells

Preparation

Step 1

Cook the minced onion in an oiled medium frying pan at medium heat until the onion sweats. Stir occasionally. Mix the chili powder, cumin, coriander, oregano, cayenne pepper, and salt well, and add them to the frying pan.
Add the garlic, and stir for about a minute. Add the ground beef. Vigorously break up the ground beef and cook until mostly browned. Add the tomato sauce, chicken broth, apple cider vinegar, and sugar. Salt and pepper to taste. Simmer on medium high heat uncovered for 5 to 10 minutes or until the sauce reduces. Mix and serve in warm tortillas/taco shells with desired amounts of avocado, tomatoes, lettuce, sour cream and cheese.
