CHOCOLATE MARBLE BREAD

A local newspaper did an article on Grammy Sacks' when this recipe appeared in a national cookbook. She was quoted in the article as saying "My mother made this bread many Sundays for breakfast - and, if I was lucky, there would be some left to savor Monday and Tuesday mornings as well! Just a whiff of this beautiful bread baking brings back treasured memories."

- DOUGH:
- 7-7 1/2 cups flour (divided 3 cups and 4-4 1/2 cups)
- 1 package (1/4 ounce) active dry years
- 2 cups milk
- 1/2 cup sugar
- 1/4 cup butter
- 1 teaspoon salt
- 2 eggs
- 1/4 cup baking cocoa
- GLAZE:
- 1 cup confectioner's sugar
- 1 tablespoon milk
- 1/4 cup chopped walnuts (optional)

Step 1
Combine 3 cups flour and yeast.
In a saucepan, heat mild sugar, butter and salt to 120-130 degrees, stirring constantly.
Add to flour mixture and mix well.
Beat in eggs, on low speed, for 30 seconds, beat on high for 3 minutes.
Add enough remaining flour to form a soft dough.
Turn onto a floured surface and knead until smooth and elastic, about 6-8 minutes.
Divide into thirds and knead cocoa into one-third of the dough (may take 5-6 minutes) and shape into a ball. Shape remaining two portions into one ball.
Place each ball in a lightly greased bowl, turned once to grease top.
Cover and let rise in a warm place until doubled in size (1-1 1/4 hours).
Punch dough down, then cover and let rest for 10 minutes.
On a lightly floured surface, roll white dough into a 20x10 inch rectangle. Repeat with chocolate dough.
Place chocolate layer on top of white layer and roll up jelly-roll style starting with the long side. Press edges to seal.
Cut into 20 slices and place in a greased, 10-inch tube pan layering as needed. Cover an let rise until nearly doubled, about 30-40 minutes.
Bade at 350 degrees, 40-45 minutes, or until lightly browned.
Remove from pan immediately and cool on wire rack.
Combine confectioner's sugar and milk and drizzle over bread.
Sprinkle with nuts, if desired.
