Ingredients
- 2 lbs boneless skinless chicken breasts, cut into strips
- 1/2 cup Dijon mustard
- 4 cups cornflakes or panko
- 2 tsp minced sage
- 2 tsp minced thyme
- 3/4 tsp salt
- 1/4 tsp ground pepper
- barbecue sauce, for serving
- 28 wooden skewers.

Preparation
Step 1
Preheat oven to 400 degrees. Line baking sheet with parchment paper, spray with nonstick cooking spray.
Thread chicken into skewers, working in and out of meat. Brush each piece with mustard, both sides.
In food processor, combine cornflakes or panko, sage, thyme, salt and pepper. Pulse to a coarse meal, then transfer to a shallow dish.
Dredge each chicken skewer in mixture until evenly coated.
Place on baking sheet, bake 8-10 minutes. Serve with barbecue sauce.
