Ingredients
- pastry for 12 deep tart
- shells
- 1/2 cup butter
- 1 1/2 cups brown sugar
- 1/4 cup granulated sugar
- 1/4 cup corn syrup
- 1 Tbsp. vinegar
- 1 tsp. vanilla
- 3 eggs
- Add raisins or nuts to each tart shell, if you wish.

Step 1
Preheat the oven to 375°F. (190°C). Line the tart tins with the pastry. (Paper muffin tin liners make removal of the tarts easier.) In a saucepan, melt the butter. Add the brown and white sugar, corn syrup, vinegar and vanilla. Bring to a simmer, stirring to prevent burning. Remove from the heat. Beat in the eggs, 1 at a time. Fill the tart shells three-quarters full. Bake, watching constantly, for 12-15 minutes or until golden brown. Makes 12 tarts — enough for 2 to 4 afficionados.
