Ingredients
- 2 c. green pimiento stuffed Spanish olives, or a combination of green and black Spanish olives
- 1/4 c. thinly sliced roasted red pepper or piquillo pepper
- 2-3 thin slices fresh lemon
- 2 springs fresh thyme
- 1 bay leaf
- 1 dried red chile or a generous pinch of red crushed chile flakes
- 1/2 tsp. fennel seeds, toasted
- 1/2 tsp. whole coriander seeds, toasted and lightly cracked
- 1 to 1 1/2 c. Spanish extra virgin olive oil

Preparation
Step 1
Mix everything but the oil in a bowl to combine well. Transfer to a 1 pint canning jar or other jar with a tight fitting lid.
Pour oil over the olives and seasonings until they are completely covered.
Refrigerate for at least a week to allow flavors to develop. Bring to room temp. before serving.
